Baby Arugula Salad with dried cranberries, walnuts and a balsamic vinaigrette
4 cups of baby arugula
½ cup of dried cranberries
½ cup of chopped walnuts
The Dressing
In the bowl of a food processor add:
1 clove fresh garlic
2-3 sprigs of fresh flat leaf Italian parsley
¼ cup balsamic vinegar
With the blade spinning slowly add ¾ cups of extra virgin olive oil
(this will result in a thicker, caramel colored dressing that will
easily stick to any leafy greens)
