Eggplant Meatloaf

1 lb. ground turkey or beef
1 lb. ground pork or sausage meat
2 fresh eggplants, sliced thin, grilled and coarsely chopped
1/4 cup fresh chopped parsley
1 teaspoon chopped garlic
black pepper to taste

Mix all ingredients together and form into a loaf
Bake at 350 for about 1 hour or until meat reaches 165 degrees on a meat thermometer
