Garlic Mashed Potatoes & Gravy
6 medium
potatoes cubed and boiled until soft and drained
1 cup warm milk
2 tablespoons chopped fresh garlic
3 tablespoons olive oil
5 tablespoons fresh chopped parsley or basil
Place cooked potatoes in a large bowl and mash with a potato masher
or mixer
Slowly add warm milk, stirring as you add it and stopping when
potatoes become fluffy
If potatoes are too dry, just add a bit more warm mild
In a saute pan
Add oil, garlic, salt & pepper to taste and saute until garlic just
begins to brown (about 1 minute)
Add this to the potatoes and mix - Serve immediately
Gravy
Collect pan drippings
and place them in a small pan
Add 5-6 tablespoons of flour and stir
Place pan on low heat & slowly add 2 cups chicken broth, stirring
continuously until gravy thickens
