Grilled Cheese Sandwiches
with Cheddar, Brie, Tomatoes, and Arugula
4 slices rustic Italian bread (cut into approximately 1/2 inch
slices)
4 slices cheddar (or other favorite cheese)
4 tablespoons softened brie
6 slices tomatoes
10-12 leaves (approx) fresh arugula
2 tablespoons softened butter or spread
Spread brie on two slices of bread. Divide remaining ingredients
between the two slices. Top with the remaining two slices of bread
and press together. Butter outside of bread and put into a panini
press or place in a non-stick skillet (covered) and brown on both
sides and cook until cheese melts (about 2 minutes on each side).
Cut each sandwich in half and serve.
