Grilled Pork Chops and Sliced Eggplant

This recipe is a perfect example of using high quality ingredients, prepared in a simple way. Now, that’s Italian!

4 boneless pork chops (the freshest you can find)
2 slender fresh eggplants – thinly sliced into ¼ inch round slices

Marinade
1/2 cup extra virgin olive oil
a pinch of oregano, salt and pepper

Brush first the eggplant with the marinade and set aside, Rub the pork with the remaining mixture and place on a grill or grilling pan on stovetop. Cook the pork until the meat is cooked through and is opaque in color. Remove from grill and set aside.
Cook the eggplant slices for about one minute on each side. Remove from heat, Place all on one or more serving platters, drizzle with a bit more oil if needed and serve.

Go out for gelato or ice cream.
