Grilled Vegetable Platter
One eggplant
One zucchini
One red bell pepper
One Spanish or Vidalia onion
One or two large carrots
3 tablespoons extra virgin olive oil (or flavored oil below)
Wash and dry vegetables and peel carrot and onion.
Cut eggplant, zucchini, and carrot in diagonal slices, about 1/4 inch thick
Cut pepper in half and remove core and seeds. Cut into 1 inch strips
Cut onion in half and with cut side down cut into 1/4 inch semi circles
Place vegetables on a flat baking sheet sprayed with cooking spray and place
under broiler at the setting closest to the heat source *
Cook until browned (about 3-5 minutes) turn & grill other side
Arrange on a platter and drizzle olive oil over them
Season to taste
* The flavor of the vegetables will be further enhanced if grilled over an open
charcoal grill.
