Lentil/Split Pea Soup with Sausage and Pasta
¼ cup chopped yellow onion
3 tablespoons extra virgin olive oil
½ lb. sausage meat (casing removed)
4-6 cups chicken broth
1 cup lentil
1 cup split peas
½ cup small pasta (such as acini pepe)
¼ cup marinara sauce (see recipe
on website)
salt and pepper to taste
In a crock pot sauté onion until caramelized (about 4 minutes). Add
sausage meat and brown (about 6-7 minutes). Add beans and broth.
Cook until beans are tender (about 4-5 hours). Stir occasionally.
Add pasta and cook until al dente (about an hour) add tomato sauce.
Add more broth or some water if needed. Check seasoning, garnish
with fresh parsley and serve.
