Fresh Pears in Red Wine
2 tablespoons butter
1 ripe pear, any variety, peeled and cut into medium slices
2 tablespoons dry red wine
2 tablespoons light brown sugar
2 tablespoons White Wine Sauce (see archived recipe)
Vanilla ice cream (optional)
2 sprigs fresh mint and whipped cream (optional garnishes)
Melt the butter in a small or medium sauté pan over medium-low heat
and sauté the pear slices in the melted butter for about 1 minute,
or until the pears begin to turn golden brown. Add the wine and
brown sugar and cook for another minute, until the pear slices begin
to caramelize and soften. Briefly cook the White Wine Sauce, until
the pears are cooked but still firm. Divide the mixture between 2
serving plates. Add ice cream if desired, and garnish with mint
and/or whipped cream.
