S Cookies

Dry Ingredients
4 cups unbleached flour
2 cups sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt

Wet Ingredients
4 eggs
1 cup Crisco or other shortening
melted & cooled
Juice from one fresh lemon
1 tablespoon vanilla extract

1. Preheat the over to 350
2. Mix together the dry ingredients except for the sugar.
3. In a separate bowl beat the eggs and whisk in the sugar and then the remaining wet ingredients
4. Gradually mix the dry into the wet ingredients and chill for 5 min
5. Put the dough onto a flour covered board and working in small batches make rods 3” long by 1” thick, shape into and S and place on a greased cookie
5. Bake 10-12 minutes
6. Cool on a rack and ice

Icing
2 cups confectioners sugar
2 tablespoons water
2 tablespoons fresh lemon juice
