Tempura Batter
Eggs
Cornstarch
Seltzer Water
Salt and Pepper to taste
Vegetable oil for frying
Start with 1 or 2 eggs (depending on the quantity of items you’ll be
frying)
Then add cornstarch until the batter is very thick. Follow by adding
seltzer water (or plain water--seltzer makes the batter somewhat
lighter) a few drops at a time (adding more cornstarch if needed)
until you reach the consistency of thick pancake batter. Season with
salt and pepper. Coat each item with the batter and drop into a pan
of hot oil (a wok or other deep pan works great for this). Remove
when each piece is golden brown (about one minute) and place on a
plate lined with paper towels. Season with addition salt and pepper
if needed and serve.
