Warm Penne ‘Salad’
1-pound penne- cooked al dente
½ cup extra virgin olive oil
1 large garlic clove- finely chopped
¼ cup freshly grated parmesan cheese
Topping
2-3 cups diced fresh tomatoes
1 lb. fresh mozzarella--medium dice
¼ cup slivered sun dried tomatoes
¼ cup black or kalamata olives--coarsely chopped
¼ cup fresh basil--sliced
3-4 tablespoons extra virgin olive oil
Salt and pepper to taste
Place a large 12-inch skillet over medium to high heat
Add olive oil and garlic and sauté until golden (about 30 seconds)
Add penne and sauté for about a minute, tossing pasta until warm and completely
coated with the oil and garlic
Add cheese toss and remove from heat.
Add all topping ingredients in a large bowl and toss
Place pasta onto a serving platter or individual dishes
Top with the topping ingredients and serve immediately
