Cream Cheese Stuffed French Toast

Two servings

4 tablespoons cream cheese
4 1/2 inch slices of challah bread
3 eggs beaten
¼ cup milk
1 teaspoon vanilla
½ cup heavy cream, whipped or cool whip
Fresh strawberries or other seasonal berries—sliced
Fresh mint for garnish (optional)
Maple syrup

To make batter:
• Beat eggs, add milk and vanilla and beat some more until all liquids are incorporated
• Spread cream cheese between two slices of bread
• Dip in batter on both sides and let it sit in the batter for a few seconds

In a warm 9” skillet or flat grill (preferably coated):
• Add butter or cooking spay to coat bottom
• Add bread and cook on both sides (about 2 min. per side) or just until golden brown
• Spread the cream cheese between two slices of bread to get two sandwiches.
• Put on a microwave safe plate and microwave for about 30 seconds; just until the cheese melts--slightly
• Top with berries, whip cream, syrup and a sprig of fresh mint.

Serve immediately—this is an awesome dish!
