Poached Filet of Tilapia in a Fresh Pomodoro Sauce
2 cups fresh Italian plum tomatoes chopped
1 cup chicken broth
1 tablespoon olive oil or cooking spray
1 clove fresh garlic chopped
2 filets of Tilapia or other white fish
Add olive oil and garlic and saute until just golden brown,
Add 1/4 cup of the broth and then the tomatoes
Add the filets, cover and cook until fish flakes
Add fresh basil and serve alone or over rice
