PERFECT LUMP-FREE TURKEY GRAVY

1/4 cup turkey drippings
1/4 cup flour
1 cup chicken broth
Salt and pepper to taste 

Add drippings to a medium sauce pan over medium high heat.  Add the flour and stir with a wire whisk until all of the flour is incorporated and mixture resembles a paste. 

Slowly add the broth, stirring continuously until all of the broth has been added.  Lower heat and let cook for about 5 minutes or so while flour cooks and gravy thickens, stirring occasionally and season.

Recipe Notes...

It is far better of have a too thick gravy than too thin.  When its too thick, simply stir in more broth a little at a time until it reaches the desired consistency. 

If the gravy is too thin, you must remove about 1/4 cup or so of the gravy into a small bowl or cup, add a tablespoon of flour, stir, add a bit more broth, stir to incorporate, then add it back to the saucepan. This will prevent it from getting lumps. 

Lumps always occur when you add flour to a larger amount of liquid.  Fat and flour should always start out with approximately equal amounts of each.
